Kyara is the highest grade in the Japanese kōdō ranking system — the counterpart of Chinese kynam. Within the "Six Countries, Five Tastes" system, kyara is the only material that simultaneously possesses all five — sweet, bitter, sour, pungent and salty. Generations of the Tokugawa family and the imperial household have collected it; it is priced by the "monme" (3.75g) unit.
